Mocha Cookies

Next week is finals week over at Drexel, so I decided to combine my need for caffeine and my love of sugar to help out those in need. These are dense but soft cookies, and if you can wait 15-20 minutes after they come out of the oven, they are perfect for dunking in coffee!

Mocha Cookies

Adapted from Table for Two Blog

3 sticks unsalted butter, softened

2 cups light brown sugar

2 eggs

4 tsp. vanilla extract

a little under 4 cups all-purpose flour

2 tsp. baking soda

1 tsp. salt

2-3 heaping tbsp. coffee grounds (I used two bold roast K-Cups)

1 cup chocolate chunks, chopped

1. Preheat the over to 325. Beat the butter and sugar until fluffy, then add the eggs and vanilla.

2. Mix dry ingredients together (flour, baking soda, salt, coffee grounds) and then slowly mix into the butter mixture. Once combined, add chocolate chunks. I chopped the chocolate chunks even smaller, so you never get a huge chunk of chocolate, but the flavor is there! You can keep the chunks whole if you like.

3. Bake at 325 for 8-12 minutes (my oven is very uneven) you want them to be slightly soft in the middle, then let sit until firm for dunking!
