Garlic & Rosemary Leg of Lamb

December at my house is my absolute favorite time of year. My mom decorates the house to the nines, my dad cooks delicious meals every night, and our family watches movies and plays board games all day long. Tonight was my sister’s last day of school, my dad came home from work early, and my mom’s sisters drove up from Pittsburgh to visit. Dinner was IIIINCREDIBLE.

Papa’s Leg of Lamb

  • 1, 6lb leg of lamb, fresh
  • 8 cloves of garlic, peeled
  • 6 sprigs of rosemary
  • olive oil
  • salt & pepper

Take some of the rosemary off of the sprig. Insert the cloves about 1/4 inch into the lamb, along with the rosemary sprigs. Then rub the lamb with olive oil, salt and pepper, and sprinkle the extra rosemary sprigs. Cook at 325 degrees until lamb is medium rare (about 2 hours and 15 minutes for us!)

We had our lamb with a quinoa dish (with sautéed onions, apples, cranberries and a hint of maple sugar) that was cooked in an acorn squash, roasted potatoes and grilled asparagus. Perfect way to kick off the holiday season 🙂

After dinner we found some of Kendra’s old stories she wrote when we were in Virginia (circa 2000), they were adorable!

After that, we made mama’s gingerbread men… probably my favorite holiday cookie!
